Couscous w/ Pine Nut, Fresh Coriander & Lemon

My husband and I have started switching out rice for couscous! It is so much healthier, lighter and packed full of essential nutrients! Couscous is native to northern Africa but is a popular dish in the Middle East. This recipe packs the couscous full of flavour. You could use this as a side dish, salad, or even a dessert! Do give it a go! You’ll be surprised at how delicious it is!

Serves 4

Ingredients:
1/2 teaspoon salt
2 tablespoons olive oil
2 garlic cloves (finely chopped)
1/2 teaspoon turmeric
1  1/2cups water
1 teaspoon finely grated lemon zest
1 1/2 cups plain couscous
Handful of chopped fresh coriander
2 tablespoons fresh lemon juice
1 Tablespoon roasted pine nut

Method:

  1. Heat oil in a saucepan over medium-high heat
  2. Add garlic and turmeric and stir for 1 minute
  3. Add the water, lime zest and salt
  4. Bring to boil
  5. Remove pan from heat
  6. Stir in couscous
  7. Cover; let stand until liquid is absorbed (should take about 5 minutes)
  8. Fluff with fork, mix in the coriander, pinenut and lime juice.
  9. Season with salt and pepper
  10. Enjoy!
